Eaten as a breakfast, snack or dessert, it's sure to please young and old alike! Easy Gourmet Granola Parfait 2 C. old fashioned rolled oats 1 C. chopped raw almond, walnuts, cashews, pumpkin seeds or whatever combination of nuts & seeds you like 1/2 C. raw sunflower seeds 1 Tb. chia seeds 1 Tb. hemp seeds 1 Tb. ground flax seeds 1 tsp. sea salt 1 tsp. ground cinnamon 1/4 C. raw agave nectar (or use brown rice syrup) 1/2 C. pure maple syrup 1/4 C. canola oil, melted coconut oil or melted vegan butter 2 Tb. water 1 Tb. pure vanilla extract optional: raisins or dried fruit to be added after it's baked Preheat oven to 325F. Mix all the dry ingredients in a large bowl. Mix all the wet ingredients in a small bowl. Add wet ingredients to dry and mix well with a large spoon. Make sure to coat everything well so no pieces are left dry. Spray rimmed baking sheet with non-stick spray or line with parchment paper and spread granola out in a thin layer. (You may need 2 baking sheets to ensure a thin enough layer) Bake for 30-40 minutes or until brown and crispy.
